What it is

A bún bowl is cool rice vermicelli in a bowl with grilled meat or tofu, shredded lettuce and herbs, pickled carrot and daikon, crushed peanuts and fried shallots, plus a small container of nước chấm you pour over and toss yourself. It is a salad and a noodle dish at the same time, and it is what most people should order in summer.

What makes a good one

Everything should be at its own correct temperature — noodles cool, meat hot off the grill, herbs cold and dry. If the whole bowl arrives lukewarm and damp the kitchen assembled it early. The dressing should be balanced rather than sugary, and there should be enough of it to coat everything once tossed.

Regional variation

Bún thịt nướng is grilled pork. Bún chả giò adds a cut-up fried spring roll. Bún chay uses tofu and vegetarian rolls. Bún chả, the Hanoi version, is a different structure entirely: the noodles and the grilled pork arrive separately in a bowl of warm dressing.

Common questions

Does a bún bowl travel well?
Very well, as long as the dressing is packed separately — which is the default on Beply. Nothing in the bowl is meant to be hot, so a twenty-minute ride costs you nothing.
Is it vegetarian?
Bún chay is. The standard dressing contains fish sauce, so a vegetarian bowl needs the vegetarian dressing as well as the tofu — both are separate choices on the dish, and we label which is which.
