A phin does not care that there is a line. The grind is coarse, the water goes in twice, and the drip takes about four minutes — which is why every cup here is made to order and why the counter has stools. Robusta, not arabica: it is what Vietnamese coffee is, and it is why condensed milk works with it instead of drowning it.

- Cà phê trứng — Egg coffee — 6.75 USD — Egg yolk whipped with condensed milk into a warm custard, poured over strong coffee. A Hanoi drink; eat the top with the spoon.
- Chè ba màu — Three-colour dessert drink — 6.00 USD — Mung bean, red bean and pandan jelly under crushed ice and coconut milk. Stir it before you drink it.
