The baguettes are mixed at five in the morning and again at noon, which is the whole argument for coming here rather than anywhere else — a bánh mì is a bread problem before it is a filling problem. The shell should shatter and the crumb should be almost nothing. If you arrive at 2:15 the bread is still warm and the pickles have not been sitting.
